This food is called nametake (pronunciation: /nÊmetÊke/), a Japanese cuisine made from an enokitake mushroom cooked with soy sauce. It is one of the widely consumed Japanese delicacies eaten straight or used as a seasoning.
Uses enoki harvested at Nagano Prefecture, the major production cites of mushrooms in Japan, and simmered with salty-sweet soy sauce.
This cooked enoki is also seasoned with umami based on kombu and seafoods. Despite its rich taste, it is 30% less salty than that of the average nametakes.
